Jalapeño Poppers with Bacon and Marscapone

- 6 Jalapeños
- 6-8 ounces marscapone, room temperature
- 6-8 ounces shredded cheese (I used Colby Jack/Monterey Blend)
- 1-2 Tbsp chopped chives
- 1 tsp garlic powder
- salt and pepper to taste
- 6 slices bacon
- paprika
Instructions
1Heat oven to 400 degrees; line a baking sheet with parchment paper.
2Slice jalapeños lengthwise, then clean out seeds; set aside.
3In mixer, blend the marscapone, blended cheese, chives, garlic powder, salt and pepper until mixed well.
4Spoon mixture into jalapeño halves.
5Cut bacon slices in half crosswise and wrap around each pepper, starting and ending on the underside. Secure with toothpicks if preferred.
6Sprinkle with paprika
7Place peppers on prepared baking sheet and bake 25-30 minutes, or until bacon is golden brown.
